The development of trade in agricultural and agri-food products has resulted in the international circulation of increasingly diversified products. In addition to this movement, there is a trend to promote local and specific products, with a focus on products that carry meaning or identity. In Central Africa, this trend is conducive to the arrival of new foods in an export sector historically dedicated to colonial crops (cocoa, coffee, bananas, etc.): safou (also known as African plum or bush butter plum) an oleaginous fruit widely consumed in the sub-region, various leafy vegetables, Penja pepper under a protected geographical indication, or "wild" mangoes (Achancho 2013; Tabuna 2016). This project seeks to understand the emergence of these new commodity chains. How do value chains of underutilized products develop and structure themselves to reach international export markets, characterized by volume, quality and standardization requirements? The research will be conducted in collaboration with the Higher Teacher's Training School for Technical Education (ENSET) of the University of Douala in Cameroon and will involve a nine-week field mission, with the assistance of a master's student at ENSET.
