Citizen-consumer preferences are a key factor in the commercial success and political legitimacy of decisions taken by businesses (producers and distributors) and by the State. The challenge is to identify the scope of the conditions, under which citizen- consumers participate in decisions relating to the sustainability of food systems. this research project is leaded by Jean-Philippe Leresche (Unil) in collaboration with Stéphane Boisseau (Idehap), Sophie Réviron (agridea) and Joëlle Salomon Cavin (Unil)
